This recipe cuts the sugar that instant oatmeal packets contain by including fresh fruit and adds a serious protein punch by incorporating eggs. It also almost as easy to make as instant oatmeal!

7 Ingredients

  • 1 banana
  • 2 eggs
  • 6-8 strawberries, sliced
  • 3 tablespoons canned coconut milk
  • Dash cinnamon
  • Splash vanilla extract
  • 1 tablespoon butter


  1. Mash banana, eggs, and most of strawberries in a bowl. Add 1 tablespoon coconut milk, cinnamon, and vanilla.
  2. Heat a skillet over medium heat and grease with 1/2 tablespoon butter. Pour mixture into skillet and cook like scrambled eggs.
  3. Top with remaining strawberries, coconut milk, and butter.
