Nothing is better than soup on a cold, brisk day. With this super-flavorful, easily customizable recipe, it’s easy to get a warm bowl that satisfies not only the taste buds, but nutritional needs too. Feel free to add other vegetables and seasonings as you wish.
Ingredients
- 1 tablespoon olive oil
- 1 cup broccoli florets
- 10small mushrooms
- 10 spears asparagus, diced
- 3 ribs celery, diced
- 2carrots, diced
- 1/2onion, diced
- 1 cup quinoa
- 3 cups vegetable broth
- Salt
- Pepper
- Seasoning of choice (Sriracha, herbs, etc.)
Directions
- In a saucepan, heat olive oil and sauté vegetables until begin to soften.
- Add quinoa, vegetable stock, and seasonings, and bring to a boil. Cover and let simmer for 10 minutes, or until quinoa is fully cooked.
