Nothing is better than soup on a cold, brisk day. With this super-flavorful, easily customizable recipe, it’s easy to get a warm bowl that satisfies not only the taste buds, but nutritional needs too. Feel free to add other vegetables and seasonings as you wish.


  • 1 tablespoon olive oil
  • 1 cup broccoli florets
  • 10small mushrooms
  • 10 spears asparagus, diced
  • 3 ribs celery, diced
  • 2carrots, diced
  • 1/2onion, diced
  • 1 cup quinoa
  • 3 cups vegetable broth
  • Salt
  • Pepper
  • Seasoning of choice (Sriracha, herbs, etc.)


  1. In a saucepan, heat olive oil and sauté vegetables until begin to soften.
  2. Add quinoa, vegetable stock, and seasonings, and bring to a boil. Cover and let simmer for 10 minutes, or until quinoa is fully cooked.
