Thanksgiving doesn’t always have to be about tradition. Sure, Nana’s homemade pumpkin pie is bomb, but you know what else is? These no-bake pumpkin spice tarts. They actually taste like healthy pumpkin pie (in a good way) but take a fraction of the effort and don’t require any time in the oven (which is probably going to be occupied anyway).

Oh yeah, and they’re Paleo and vegan, so everyone at the table will be able to enjoy these babies!

No-Bake Pumpkin Spice Tarts

Recipe adapted from Detoxinista
Makes: 8 servings
Ready in: 20 minutes

INGREDIENTS

2 cups granola of your choice
1 cup pumpkin puree
1/4 cup almond milk
1/4 cup coconut oil, melted
3/4 cup Medjool dates, pitted
1 teaspoon vanilla
1 1/2 teaspoons pumpkin pie spice

DIRECTIONS

1. Line a standard muffin tin with 8 parchment cups and sprinkle enough granola in each cup to cover the bottom. Set aside.

2. Combine all remaining ingredients in a blender and blend until completely smooth.

3. Pour the batter evenly into the 8 cups. Smooth the tops so they freeze evenly.

4. Freeze tarts for 4-6 hours until set completely. Remove from tin and serve!
