This recipe for muammara is a Middle Eastern classic that is sure to draw a crowd at your next party. It has a potent taste of garlic and cumin, but is rounded out by the walnuts, tomato paste, and oil. It is extremely flavorful and quite unique next to other appetizer mainstays. Traditionally, it is made with breadcrumbs and Parmesan cheese, but I’ve tweaked the recipe a bit to make it vegan. Enjoy with crackers or toasted bread!
What You’ll Need:
1.5 cups walnuts
½ cup nutritional yeast
3-4 garlic cloves, mashed
2 teaspoons cumin
1 teaspoon salt and paprika
1 cup tomato paste
2-3 tablespoons olive oil
Juice of ½ lemon
What to Do:
- Mix walnuts, nutritional yeast, garlic cloves, cumin, salt, and paprika in a food processor until mealy and evenly combined.
- Add the tomato paste and pulse.
- Add the olive oil and lemon juice and continue to mix until the mixture is uniform
- Store in a glass container in the refrigerator prior to serving. The flavors intensify if served the next day. Enjoy!
