Pork Scrap is well known in the Lowell, Massachusetts area, I grew up with the stuff. I have all way’s used it on toast or just as a sandwich to take too work for lunch (yum). We have a store in Lowell called Cote’s Market which has carried on the cuisine foods from the French Canadian people that settled in this city during the Manufacturing Industrial era back in the 1800’s. So try this recipe if you want for the first time you can change the ingredients according to your taste. Enjoy!

Ingredients (8)

  • 1 1/2 Pounds Ground Pork
  • 1 1/2 Cups Bread Crumbs
  • 1 1/2 Cups of Milk
  • 1 1/4 Tsp. Salt
  • 1 1/4 T. Pepper
  • 1 1/4 T. Cinnamon
  • 3/4 T. Ground Cloves
  • 1 Med Onion ( Chopped Fine )

Instructions

  1. Cook Your Pork (Do Not Drain) Then add all other ingredients, cook on medium heat for 1 to 1 1/2 Hours. Then Refrigerate over night in a plastic tub.
