Fresh lime juice, cane syrup, and white rum strike a flawless balance of sweet, sour, and boozy. You’ll be quaffing these easy cocktails all summer.
To make the rich cane syrup, just heat 2 parts cane sugar and 1 part water in a saucepan, stirring constantly so the sugar dissolves, and as soon as the mixture comes to a boil, remove from the heat to cool completely. You can store the cooled syrup in an airtight container in the refrigerator and use it to add a little sweetness to any drink, alcoholic or otherwise.

- 1 ounce fresh lime juice
- 1/2 ounce rich cane syrup
- 2 1/2 ounces Cuban white rum

- Combine the lime juice, rich cane syrup, and Cuban white rum in a cocktail shaker with a scant handful of crushed ice. Shake vigorously for 15 to 20 seconds, then strain into a sour glass and serve.
