This cake has not one but TWO mystery ingredients, neither of which will your friends be able to guess. It is a great bring-into-work dessert, as it sparks conversation in addition to appetites!

  • 2/3 cups butter
  • 1-3/4 cups sugar
  • 4 ounces unsweetened chocolate, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa
  • 1-1/2 cups sifted all-purpose flow
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 cup pureed green tomatoes
  • 1/4 to 1/2 cup coffee
  • 8 ounces cream cheese
  • 1/2 cup butter
  • 4 cups confectionary sugar
  • grated peel from one large orange
  • freshly squeezed orange juice

Instructions

  1. Preheat oven to 350 degrees. In a large bowl, cream together the butter and sugar. Stir in the chocolate, and then the eggs, one at a time. Add the vanilla extract. In another large bowl, sift together the cocoa, flour, baking powder, baking soda, and salt. Add the flour mixture to the butter mixture alternately with the beer and tomatoes. If the batter appears stiff, add the coffee. Pour the batter into a greased and floured 9×13-inch baking pan. Bake for 35 minutes, or until a tester inserted in the center comes out clean. Cool the cake on a wire rack, then invert on a serving plate. May serve plain or ice with Orange Cream-Cheese Frosting.
  2. Orange Cream-Cheese Frosting: Mix Cream Cheese and butter together until smooth. Add confectionery sugar. Mix in grated orange peel. Add orange juice one or two tablespoons at a time, until it reaches spreading consistency.
