Recipe: Tropical Chia Pudding

If there's anything I love more than indulging my sweet tooth, it's indulging it with a healthy, natural, no-sugar-added dessert. That's right! I just said healthy and dessert in the same sentence. Chia pudding has become one of my favorite desserts.  And this version — naturally sweetened with fresh pineapple and mango — is perfect for satisfying all of my sweet cravings!

Recipe: Tropical Chia Pudding

Serves 4

 

What You'll Need:

1/2 cup chia seeds
2 cups low-fat coconut milk
1/2 cup pineapple, rough dice
1/2 cup mango, rough dice
1/4 cup unsweetened coconut flakes
1 tablespoon agave syrup (optional)
2-3 tablespoons additional chopped fruit (pineapple, mango, and strawberries work!)

What to Do:

  1. Add coconut milk, pineapple, mango and coconut flakes in a blender (or food processor), and blend until smooth.
  2. In a medium bowl, combine chia seeds, coconut milk mixture and agave syrup and stir until fully combine.  Cover and refrigerate for a couple hours up to overnight.
  3. Garnish with 2-3 tablespoons diced fruit and serve.
