At around 7 months you can start feeding your baby low-sugar green vegetables like green beans. Nothing more than cooked and puréed beans, this recipe makes about 7 (1/4-cup) servings that freeze fabulously for up to 6 weeks.

Game plan: Kill two birds with one stone and boil some of the beans until fork tender, pull them out of the water with a slotted spoon, and toss them with some salt, pepper, lemon juice, and olive oil for a quick adult-worthy side dish.

To reheat the baby food, let it thaw completely in the refrigerator, then heat in the microwave or on the stovetop. Stir well before serving.

  • 1 pound green beans, cleaned, ends trimmed, and cut into 1-inch pieces

Instructions

  1. Fill a medium saucepan with 1 inch of water, add green beans, and bring to a boil over high heat. Reduce heat to low and simmer until beans are starting to fall apart but are not mushy, about 15 minutes.
  2. Remove beans with a slotted spoon, reserving cooking liquid, and place in the bowl of a food processor fitted with a blade attachment. With the motor running, add 2 tablespoons of the cooking water and process until the beans are puréed and no large pieces or strings are visible.
  3. Let cool slightly, then divide into 1/4-cup portions, place in airtight containers, and refrigerate up to 5 days or freeze up to 6 weeks until ready to use.
