While not as comforting as, say, a casserole, there’s something inherently cozy about a skillet dinner. And with the leaves starting to hit the ground, we’re all about warm, substantial meals. It’s amazing just how quickly (and easily) a healthy, hearty meal comes together when you’re using an old-timey cast-iron pan. Whether you’re in the mood for eggs, pasta, or pizza, these five skillet recipes go way beyond basic pancakes.

This grain-free, hearty breakfast dish is perfect for Paleo adherents. Ground beef and eggs provide tons of protein to get your engine going, while sweet potatoes and veggies add plenty of vitamins, minerals, and fiber. Top it all off with some healthy fat from coconut oil and avocado and you’re good to go.
2. Meyer Lemon Skillet Cake via Beard and Bonnet

It may not win any beauty contest awards, but this rustic, zesty lemon cake is ideal for whipping up on a chilly fall afternoon. Plus, the gluten-free dessert comes together in less than half an hour. Make it a bit healthier by choosing whole-wheat flour or reducing the amount of sugar.
3. Thin-Crust Skillet Pizza via Pass the Sushi

When we think pizza, we normally envision blazing-hot, wood-burning ovens. Not necessary! Whip up a crunchy pie all in one pan for a perfect weekday dinner. Add extra nutrients with vegetable toppings and whole-wheat crust.
4. Cast Iron Chicken via Nutmeg Nanny

This impressive main course is almost a one-pot meal. Cool autumn weather is no match for crispy roast chicken with potatoes and mushrooms. Plenty of rosemary, garlic, and lemon juice gives this skillet meal tons of flavor.
5. Penne Rosa with Shrimp via Back to Her Roots

Pasta alla vodka just got a serious makeover. Made with whole-wheat penne, fresh mushrooms, tomatoes, and spinach, this meal is pretty darn healthy. It gets a boost of creaminess from Greek yogurt and some lean protein from shrimp. Mamma mia!
