Super Bowl Sunday is a night many Americans forget about those fresh new year’s resolutions. The NFL championship game is not exactly a prime dieting night thanks to the snacks, beer, and desserts. After all those wings, nachos, bacon-coated potato skins, and pigs in a blanket, pledging to follow Meatless Mondays might sound like a good idea. These vegetarian entrees are light but definitely not bland — in fact, they just might convince you to go veggie more than once a week!
