This recipe cuts the sugar that instant oatmeal packets contain by including fresh fruit and adds a serious protein punch by incorporating eggs. It also almost as easy to make as instant oatmeal!
- 6-8strawberries, sliced
- 3 tablespoons canned coconut milk
- Dash cinnamon
- Splash vanilla extract
- 1 tablespoon butter
- Mash banana, eggs, and most of strawberries in a bowl. Add 1 tablespoon coconut milk, cinnamon, and vanilla.
- Heat a skillet over medium heat and grease with 1/2 tablespoon butter. Pour mixture into skillet and cook like scrambled eggs.
- Top with remaining strawberries, coconut milk, and butter.
