Carrots can easily become a “blah” addition to the dinner table (even on Thanksgiving). But these carrots have enough chutzpah to bring folks back for seconds. Plus, thanks to their quick and easy prep, it’s easy to set ‘em and forget ‘em. Recipe inspired by Real Simple.
- 10large carrots, peeled and cut into small sticks
- 3 tablespoons olive oil
- 2 tablespoons olive oil
- 2oranges, cut into eighths
- 1/4 cup slivered almonds
- Preheat oven to 375 degrees.
- Toss all ingredients together in a baking dish or rimmed pan. Bake 30 minutes or until carrots are soft but not mushy.
