This is a lovely little old-fashioned dessert with fruit, spiced filling, and sauce all in one dish. The granola streusel is a butter and flour mixture with chewy, textural additions: oats and toasted almonds. Make sure you use baking apples that’ll keep their shape after cooking.

  • Yield: 4 to 6 servings
  • Difficulty: Easy
  • Total: 1 hr 5 mins
  • Active: 20 mins

Ingredients (11)

For the granola streusel:

  • 5 tablespoons unsalted butter (a scant 2/3 stick), melted
  • 1 teaspoon vanilla extract
  • 1/3 cup all-purpose flour
  • 1/3 cup old-fashioned oats
  • 1/3 cup chopped toasted almonds
  • 1/3 cup dark brown sugar
  • Pinch kosher salt

For the apples:

  • 4 to 6 sweet-tart baking apples, peeled and cored but left whole
  • 1 cup light brown sugar
  • 3/4 cup water
  • Kosher salt

Instructions

  1. Heat the oven to 375°F.
  2. To make the streusel, in a bowl, stir together the melted butter and vanilla. In another bowl, combine the flour, oats, almonds, sugar, and salt and stir together with a fork. Add the butter mixture to the flour mixture and stir until evenly blended and crumbly (the streusel will be slightly wet).
  3. Stuff the core of each apple with streusel, dividing it evenly between the apples.
  4. Place the stuffed apples in a glass baking dish, large enough to just fit the apples but spacing them evenly so they are not touching.
  5. In a saucepan over medium-high heat, stir together the brown sugar, water, and a pinch of salt. Bring to a boil, stirring, then pour the sauce evenly over the apples in the dish.
  6. Bake, spooning the sauce over the apples a few times during baking, until the apples are tender, about 45 minutes. Serve warm with the sauce.
