Quinoa is considered a superfood for its amazing nutritional benefits, but that doesn’t mean every preparation of the grain is healthy. Not the case here. Packed with healthy fats and herbs (plus a little feta), this dish focuses on not only flavor but nutrients too.

Warm Greek Quinoa Salad

Makes: 4-6 servings, as side
​Ready in: 30 minutes

INGREDIENTS

2 cups water
1 cup quinoa
2 tomatoes, diced
10-12 kalamata olives, diced
4-5 sprigs oregano, chopped
Handful flat-leaf parsley, chopped
1 tablespoon extra-virgin olive oil
Salt
Pepper
10 leaves basil, rolled into a log and sliced
1 cup crumbled feta

DIRECTIONS

1. Boil water in a medium saucepan. Add quinoa and stir. When it returns to a boil, cover and let simmer on low heat until cooked, about 15 minutes.

2. While quinoa is cooking, combine tomatoes, olives, oregano, and parsley.

3. When quinoa is cooked, add oil and tomato-olive mixture. Stir to combine, and season with salt and pepper as needed.

4. Top with basil and feta.
