If you’ve tried out a Paleo, Whole30, or Keto diet, you may already be embracing bacon in your life. However, there’s another cut of pork that’s pretty underrated outside the South: pulled pork. It’s one of those foods that’s easily forgotten when planning your meals for the week, even though it can add so much flavor to your go-to dishes. Plus, it can be a nice break from your usual chicken and fish routine.

Since pulled pork is way too delicious to be relegated to barbecues and cookouts only, here are seven meals to make with the meat that go beyond BBQ.

Pulled pork and plantains are such a tasty sweet-savory combination, and it only takes two other ingredients to make them into a winning dinner, app, or game-day snack. After you’ve made your pulled pork, grill or pan-fry plantains in avocado oil to make “buns.” Stack, serve, then get ready to make more because these are going to go quick.

3. Bahn Mi Brown Rice Bowls

Bahn mi is a type of Vietnamese sandwich (the word actually means bread!), but you can take the good stuff inside and turn it into a bowl because… well, bowls are the best. This recipe uses pork shoulder to make pulled pork and layers it with brown rice, cucumber slices, coleslaw, and fresh cilantro.

4. Pulled Pork Sweet Potato Hash

This might just be our dream weekend breakfast (other than when we want something sweet, of course). One, the egg yolks, sweet potatoes, and spinach make it colorful, and two, it’s just the best combination of hearty foods without being too over-the-top. Plus, it’s a great way to use leftover pulled pork from the night before.

5. Tomato Pulled Pork Soup

If you’ve never had posole, it’s a spicy Mexican stew that’s usually made with pork, hominy, and chili peppers. This 30-minute version is awesome because you probably already have most of the ingredients in your pantry, so your shopping list is short: onions, pork, chicken broth, hominy, and tomatoes.

6. Pulled Pork Enchiladas

If Taco Tuesday is getting a little repetitive (crazy thought, we know), swap ’em out for another Tex-Mex favorite—enchiladas. Start with whole-wheat tortillas and fill ’em with pulled pork, black beans, and corn, then top with enchilada sauce and cheese. While they’re baking, you can get the fiesta started with a cold one.

7. Mango Jalapeño Pulled Pork Bowls

You would never guess this delicious meal is Paleo and Whole30-approved, but might just convince you to hop on the clean-eating bandwagon. Pork tenderloin gets cooked in apple cider vinegar, mango, jalapeño, and lime juice, giving it the perfect spicy-sweet taste. Pro tip: Make life easier and buy some Trader Joe’s cauliflower rice instead of making it yourself.
