Mimosas are a brunch staple: light, bubbly, and a complement to everything from eggs Benedict and French toast. But the standard orange and Champagne combination can get stale. Sure, it’s a classic, but we say it’s time to take a walk on the wild side.

From beer and vegetable mixes to hangover cures, here are our favorite not-so-average mimosa recipes.

1. Watermelon Agua Fresca Mimosa
One of the best ways to avoid hangovers is to hydrate while drinking, so this recipe does double duty. Mixed with hydrating watermelon juice and a hint of lime, it’s a nice departure from the typical citrus mix found in most mimosas. It also makes a delicious slushie or granita when frozen.

2. Peach and Thyme Mimosas
The fresh peaches are reason enough to make this recipe at least one thyme. Not to mention, the addition of fresh herbs is a nice upgrade from good ol’ Bellinis (mimosas’ not-so-evil step sister). To make it slightly less sweet, use coconut sugar or stevia in place of regular sugar.

3. Spicy Carrot Sunrise Mimosa
Carrot juice and Champagne may not sound like the Bey and Jay of brunch, but we think you should give this recipe a chance. Full of vitamin A from carrot juice and calcium from oranges, this cocktail is half treat, half health elixir. It’s even spiced with a dash of cayenne, which burns fat and helps regulate your appetite.

4. Grapefruit Beer Mimosa Cocktail
Champagne isn’t your thing? No biggie. Swap the bubbles for beer! It makes for a slightly-less-sweet cocktail, and also keeps you full—which can help ensure you don’t throw back one too many. Another bonus? Drinking beer can reduce risk for heart disease. But don’t run for the keg just yet: It’s all about moderation!

5. Kumquat Ginger Mimosas
Kumquats may be adorable, but don’t let their petite size fool you. Biting into the small citrus fruit results in a sour burst of flavor, often leaving eaters with puckered lips and confused taste buds. Mixed with ginger and Cava, however, this cocktail is a slightly sweet and totally chugable drink. (Though we suggest sipping.)

6. Kombucha Mimosa
This cocktail cures hangovers before they even hit! Spoiler alert: It’s because it doesn’t include alcohol. This virgin concoction uses kombucha in place of Champagne, helping to detoxify the body and soothe post-drinking stomachaches. It also has a touch of spirulina to provide a nice dose of greens. 7. Strawberry Grapefruit Mimosas
Viva la mimosa! The secret ingredient in this recipe is tequila, making it the perfect beverage for a morning fiesta. It’s also blended with fresh strawberries, grapefruit, and pink Moscato Champagne—a sweet combination that masks the liquor, but still leaves you with a nice buzz and a satisfied palate.
