One of my mother’s holiday recipes, it’s not Christmas without these tarts.
It assumes you’ve already made tart shells or bought them. They don’t need to be baked blind first.
- Yields: 12
- Total: 25 minutes
- Active: 10 minutes
- 1 cup Sugar
- 2 Eggs
- 1 Lemon – juice and zest
- 1/4 cup Butter – melted
- 1 cup Coconut
- Preheat oven to 400
- Beat all ingredients together
- Fill tart shells to just under the brim.
- Bake for 12 minutes or until nicely browned.
