Avocado, we wish we could eat you for every meal, but we're getting a little bored with smearing you on toast, TBH. Luckily, there are bloggers who are hard at work creating recipes that put our favorite green fruit in the spotlight in unique ways. This week's featured foodie, Giselle Rochford of Diary of an ExSloth, is sharing seven of her favorite ways to creatively blend, mash, and pour the beloved ingredient—and we're getting hungry.
Creamy avocado makes a rich popsicle base without overshadowing the bright flavors of mango, pineapple, and kiwi. The fruit is sweet enough to make a pop that needs no added sugar (that means we can eat five of them, right?), though you could add a drizzle of agave to the blender if you’d like.
This sweet and salty breakfast pizza takes just 10 minutes to prep, but looks impressive enough to serve when your parents come to visit for brunch. Spread whole-wheat tortillas with avocado, then top with sticky-sweet figs, fresh strawberries, and tart green apple. A sprinkle of chopped walnuts and balsamic vinegar makes this pizza better than any restaurant’s avocado toast.
We think the best way to get thick, creamy dressing (without mayo) is to add avocado. Blend almond milk, green onion, cilantro, and lime juice with avo for the tastiest way to liven up any salad or grain bowl. For a quick snack, this dressing also makes a great dip for raw veggies.
Mashed avocado in a smoothie bowl gives this breakfast classic next-level flavor. Pair the orange with kale, quinoa, warm spices, and avocado for a green smoothie you definitely can’t order at a cafe.
If you’ve ever ordered Vietnamese summer rolls at a restaurant, odds are you wanted to learn to make them yourself. This spin on the traditional appetizer makes a tasty and avocado-heavy breakfast you’ll crave every morning. Mix your favorite grain with fresh fruit and wrap in rice paper wrappers (available in the Asian section of most grocery stores). Serve with a super-simple chocolate peanut butter dipping sauce... and some extra napkins.
Minty chocolate isn’t just for ice cream. Layer vegan chocolate and avocado puddings in clear cups for this eye-catching dessert. Top with shaved chocolate (or mini chocolate chips!), pumpkin seeds, and pistachios for some extra crunch.
Over guacamole? You haven’t tried adding strawberries and balsamic vinegar. Once you add fresh fruit and a little sweet acidity to your avocado dip, we bet you’ll be reaching for the second bag of tortilla chips. Or possibly even just going at it straight up with a spoon. We get it.
