- 8 cups arugula
- 2 cups sliced figs

Instructions
Place 2 tablespoons olive oil, 4 teaspoons white wine vinegar, 2 teaspoons honey, and 2 teaspoons Dijon mustard in a medium nonreactive bowl and whisk to combine. Place 8 cups (about 7 ounces) arugula and 2 cups (about 1 pint) sliced figs in a large nonreactive bowl. Drizzle with dressing, season with salt and freshly ground black pepper, and toss to coat. Serve immediately.
