As many times as we hear “breakfast is the most important meal of the day,” it can still be tough to take the advice to heart when alarm clocks and rush hour traffic get involved. That’s why we’ll try out pretty much anything to make the a.m. easier, including these breakfast bakes. Good news—they’re so much better than a power bar, and prep time is seriously minimal.

You can make them the night before and warm up servings throughout the week, or pop ‘em in the oven while you get ready for the day. Either way, they’re super low maintenance to put together and filling enough to keep you satisfied through the morning. We know what we’re making this week.

1. Paleo Strawberry Coconut Breakfast Bake

If you’ve done Whole30 or just gone without grains for a bit, you’ll definitely appreciate this fake-out dish. It tastes and looks like oatmeal, but is actually made with coconut flakes, walnuts, chia seeds, eggs, and bananas. Mixing in strawberries gives it some more sweetness, and they’re so juicy when fresh out of the oven.

2. Sheet-Pan Breakfast Pizza

Breakfast pizza usually means a cold slice from the night before, but this genius recipe turns eggs into the crust before adding cheese, spinach, and breakfast sausage. You cook it in a sheet pan, so it comes out thin, like a pie. Honestly, we can’t believe we haven’t thought of this before.

3. Peanut Butter Baked Oatmeal

We love overnight oats recipes, but this baked version is way better when it’s chilly out. Warm oats taste insanely good mixed with banana, cinnamon, a little vanilla, and peanut butter. FYI, the recipe calls for an egg, but if you’re vegan, you can use chia seeds instead.

4. Baked Egg Ricotta Thyme Cups

This breakfast sounds like something you’d order at Sunday brunch, but it’s easy enough to make on a weekday morning, no sweat. Just stir everything up, pour into ramekins, and bake. Ricotta, garlic, thyme, lemon zest, and parsley will blow your standard morning eggs out of the water.

5. Sweet Potato Apple Bake

If you need a way to use up some of those fresh-picked fall apples, this hearty breakfast has you covered. Sweet potato and apple are surprisingly great together, especially when they’re baked. Eggs and coconut milk help make the dish even more filling, and it only needs 20 minutes in the oven. Pro tip: Prep the sweet potato before to keep things simple.

6. Banana Oat Baked French Toast

French toast is typically a time-intensive process with the dipping and frying of each slice… definitely not how we want to spend our Monday morning. This baked version makes things so much simpler. Like five-minutes-prep-time simpler. Get excited.

7. Baked Eggs and Spinach Sweet Potatoes

If you’re not using a sweet potato as a food vessel every now and then, you’re living life all wrong. That’s dramatic, but something about these stuffed potatoes just makes breakfast more fun. Microwave the taters for about 10 minutes before halving, cracking in eggs, and adding spinach. From there, they only need about 15 minutes in the oven to set.
