Oh, avocado toast… you’re creamy, healthy, and so delicious. The classic recipe (avocado, lemon juice, olive oil, and chili flakes spread on a slice of whole-grain bread) is always a winner.
But these nine recipes with unexpected ingredients — Gorgonzola cheese, mango, chia seeds, and even relish — bring things to a whole new level. Now you have the perfect excuse to eat avo toast every day.
1. Toasted avocado tartine with cumin salt and chia seeds
This recipe sticks to the basics but brings a little extra to the table (er, toast) with chia seeds, cumin, and lemon zest — instead of lemon juice. If you don’t have gray sea salt, you can sub regular sea salt.

This recipe ditches the olive oil and lemon juice and uses cashew cream and lime instead. It’s not a huge departure from the original, but the cashew cream adds some new flavors.
Tip: Add sprouts, cucumber, and tomato slices for an extra dose of veggies.
5. Avocado toast with heirloom tomato and balsamic drizzle
With fresh basil, ripe tomatoes, balsamic vinegar, and seeded bread, this recipe is reminiscent of bruschetta but skips the cheese — a plus for anyone who’s sensitive to dairy. If you don’t have fresh herbs on hand, mix dried basil into the smashed avocado.
6. Avocado tuna melt
Tuna melts are one of those super-easy, super-delicious staples. And while they taste great on their own, adding fruits and veggies (avocado, tomato, and cucumber), as this recipe does, never hurts.
