Lentils come in plenty of varieties (canned/dried, red/green) and can be cooked any which way for a light and protein-rich meal. The legumes are also loaded with folate, iron, potassium, and antioxidants. Go for a classic like lentil stew, or even something more exotic — lentils are a major staple of Indian cuisine.

Do it Today: Protein isn’t only found in meat — make good on that resolution to eat healthier (and greener) by subbing in some lentils for dinner tonight.
