Picnic Recipe: Carrot & Raisin Slaw
It's just not a picnic without a side of classic American slaw, a perfect addition to a 4th of July celebration. But that classic often comes packed with fatty fillers like mayo and bleu cheese— not so great for the calorie-counters out there. Since every great sandwich (or pita) deserves a side, here’s our lighter take on a historical favorite.
Carrot Raisin Salad (20 calories per serving)
Makes 8 servings
3 cups shredded carrots
1 cup raisins (or dried cranberry)
3 T Balsamic Vinegar
Salt and Pepper to taste
Directions:
- Combine carrots and raisins in a bowl.
- Drizzle vinegar into the bowl
- Mix together until evenly coated.
