Recipe: Warm Greek Quinoa Salad
Yes, it's a superfood, but even considering the amazing nutritional prowess of these little seed, some preparations can be less-than healthy, whether fried into quinoa cakes (emphasis on the "fried"), or over-dressed in a salad bar. Try this take on a healthy quinoa salad (dressing-free) for the perfect light side dish. Packed with fresh veggies and herbs (plus a little calcium from the feta topping), this dish takes quinoa to the next level.
Recipe: Warm Greek Quinoa Salad
Serves 4-6 as a side dish
What You'll Need:
1 cup quinoa
2 cups water
1 tablespoon extra virgin olive oil
2 tomatoes, diced
10-12 kalamata olives, diced
4-5 sprigs fresh oregano, chopped
1 handful fresh flat-leaf parsley, chopped
10 fresh basil leaves, rolled into a log and sliced
1 cup feta, crumbled
Salt and Pepper
What to Do:
- Boil water. Add quinoa and stir. When it returns to a boil, cover and let simmer on low heat until cooked — about 15 minutes.
- While the quinoa is cooking, make sure the tomatoes, olives, oregano, parsley, and basil are prepped, cut, and ready to go. Combine the first four ingredients, but leave the basil out to the side.
- When the quinoa is cooked, add the oil, tomatoes, and herbs (except the basil!). Stir to combine, and season with salt and pepper as needed.
- Top with basil and and feta, and serve as a side dish to any chicken or fish dish!
