There are leftovers galore in this kitchen! This recipe is as makeshift as it gets, putting to use leftover goodies from this year's Thanksgiving feast. I took inventory and put together a simple sandwich that brings together classic turkey day flavors in a unique way. The turkey adds a meaty texture and mild taste and serves as the perfect backdrop to the brie's bitter and tangy overtones and the sweetness of the cranberry dressing. A good sprinkle of black pepper adds a nice spiciness.

For this sandwich, make sure to choose a light bread that won't drown the textures of the turkey and brie. I like to use a thin bread, either whole-wheat or something a little more interesting, like pumpernickel. Also, go light on the cranberry dressing to avoid a sugar overload. Enjoy!

Serves 1

What You'll Need:

1/2 cup leftover pulled Turkey
2 pieces of your choice of bread
1 tablespoon brie cheese, crumbled
2 tablespoons leftover cranberry sauce
Small handful of greens
Cracked black pepper

What To Do:

  1. Layer all the ingredients on one slice of bread, drizzling the cranberry sauce last.
  2. Season with pepper.
  3. Top the fillings with the other piece of bread and slice down the middle to serve.
