We all love mashed potatoes with gravy, stuffing, and hearty casseroles, but this year, add a big bowl of healthy greens to the Thanksgiving line up. Use colorful rainbow chard or red chard to brighten up the table. Swiss chard, like spinach, cooks up really fast. Save time by prepping the ingredients ahead of time, then get the greens cooking five to 10 minutes before you’re ready to sit down for dinner.

Ingredients

  • 2 tablespoons olive oil
  • 1 large bunch Swiss chard, chopped
  • 1-inch piece ginger, peeled and grated
  • 2cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt
  • Freshly ground black pepper

Directions

  1. Heat oil in a large saute pan over medium heat. Add chard and stir to coat. Stir in ginger, garlic, and lemon juice, and season with salt and pepper. Cook until leaves are wilted, about 5 minutes.
