Recipe: Spicy Veggie Blend

This delicious blend of vegetables is a quick and simple creation that can be easily thrown together by anybody looking to cook — novice or professional. Made from a combination of vegetables (with a tangy twist!), this is one tasty side dish (or main course when served over quinoa or brown rice). Between the nutrients from the veggies, protein from the black beans, and tang from the hot sauce, this dish is a perfect choice for an easy (and cheap!) weeknight dinner.

Veggie Blend

Serves 4

What You’ll Need:

1 15 ounce can of black beans
2 zucchini, diced
1 can diced tomatoes
1 cup okra, diced
Sriracha (or hot sauce of choice)
Salt

What to Do:

  1. Drain black beans and diced tomatoes. Rinse under cold water until it runs clear.
  2. In a large skillet, sauté black beans, zucchini, tomatoes, and okra over medium heat for 5-10 minutes.
  3. As veggies begin to soften, add hot sauce and stir to combine.
  4. Once veggies have softened, add salt to taste. Serve warm and enjoy!

Serious question: when is okra season and how did you get your hands on it!? (Been searching for it in NYC to no avail)

They are most popularly in season during the summer time & my Mom just so happened to have some, so I was lucky to get it from her. But! I would try Trader Joes or Whole Foods since they are all about healthy living, hopefully that would be your best bet! - Danielle.
