Recipe: Spicy Veggie Blend
This delicious blend of vegetables is a quick and simple creation that can be easily thrown together by anybody looking to cook — novice or professional. Made from a combination of vegetables (with a tangy twist!), this is one tasty side dish (or main course when served over quinoa or brown rice). Between the nutrients from the veggies, protein from the black beans, and tang from the hot sauce, this dish is a perfect choice for an easy (and cheap!) weeknight dinner.
Spicy Veggie Blend
What You’ll Need:
1 15 ounce can of black beans
2 zucchini, diced
1 can diced tomatoes
1 cup okra, diced
Sriracha (or hot sauce of choice)
What to Do:
- Drain black beans and diced tomatoes. Rinse under cold water until it runs clear.
- In a large skillet, sauté black beans, zucchini, tomatoes, and okra over medium heat for 5-10 minutes.
- As veggies begin to soften, add hot sauce and stir to combine.
- Once veggies have softened, add salt to taste. Serve warm and enjoy!
