Recipe: No-Bake Pumpkin Custard
Love all-things pumpkin, but don’t have time to measure millions of ingredients and wait for the dish to bake? Then try this easy pumpkin custard! With fiber-filled pumpkin and protein-packed yogurt, sneaking some extra spoonfuls is highly encouraged. Plus, this crust-less delight cuts out the fat-and-calorie laden traditional pie crust.
No-Bake Pumpkin Custard

Serves 8. Adapted from Cooking With Trader Joes
What You’ll Need:
1 jar (10 0z) Pumpkin Butter (Or 1 can pumpkin puree mixed with 2 teaspoons cinnamon or pumpkin pie spice)
1 (8oz) package reduced-fat cream cheese
1 cup pumpkin puree
1 cup non-fat Greek yogurt
½ cup pecans, chopped
What To Do:
1. Mix pumpkin butter, cream cheese, pumpkin puree, and yogurt until well combined.
2. Top with chopped pecans.
3. Place in a round serving bowl and chill for at least two hours.
* This custard makes a great pumpkin pie filling as well. Feel free to use a ready-made crust for extra crunch! Or, if feeling inventive, try this nut-based press-in piecrust for a healthier homemade version!
