Carrots can easily become a "blah" addition to the dinner table (even on Thanksgiving). But these carrots have enough chutzpah to bring folks back for seconds. Plus, thanks to their quick and easy prep, it’s easy to set ‘em and forget ‘em.
Serves 6-8. Recipe inspired by Real Simple.
What You'll Need:
10 large carrots
3 tablespoon olive oil
2 tablespoon honey
2 oranges, cut into 8 pieces each
1/4 cup slivered almonds
What to Do:
1. Pre-heat oven to 375. Wash, peel, and cut the carrots into small sticks.
2. Toss all ingredients together in a baking dish or rimmed pan.
3. Bake 30 minutes or until carrots are soft but not mushy.
