It doesn't take much to turn a simple, mild-flavored vegetable into a crave-worthy masterpiece. This maple-glazed carrot recipe is testament to just that. A smidgen of butter and maple syrup go a long way to making chopped carrots taste like the best thing you've ever had. Maple syrup is a great natural sweetener, and cooking with a small amount of butter won't pack on the pounds. Carrots contain tons of healthifying vegetables. Vitamin A encourages red and white blood cell production and activity, keeps the immune system fit and blood vessels healthy, helps rebuild bone, regulates cell growth and division, and may reduce the risk for some cancers.
Recipe: Maple-Glazed Carrots
What You'll Need:
4 large carrots (approximately 1 pound)
1 tablespoon butter
2 tablespoons maple syrup
1 orange, juiced
1/2 teaspoon cinnamon
Salt and freshly ground black pepper to taste
What To Do:
- Slice carrots, into 1/4-1/2-inch rounds.
- Combine carrots, about 1 teaspoon of salt, and enough water to cover the carrots in a saucepan. Over high heat, boil until carrots are tender, about 5 minutes. Set aside.
- In a medium-sized frying pan, melt butter over medium heat. Once melted, add the carrots, maple syrup, and orange juice. Stir.
- Add the cinnamon, salt, and pepper.
- Cook until the maple syrup begins to caramelize with the rest of the ingredients and a glaze remains as the carrots brown slightly.
- Serve and enjoy!
