Recipe: Lentil and Goat Cheese Casserole

Lentils are perfect for those following a plant-based diet because they provide the much-needed protein (18 grams per cup!) your body craves to keep it satiated and strong. For this reason, I'm always looking for clever ways to prepare lentils with more exciting ingredients. One of my personal favorite ways to enjoy them is combined with cooked vegetables and topped with melted goat cheese. This lentil and goat cheese casserole recipe does just that, bringing some flavor and texture to otherwise simple, earthy lentils.

Recipe: Lentil and Goat Cheese Casserole

Serves two as a main dish, or four as a side

What You'll Need:

1 cup  lentils
2 cups water
1/2 tablespoon olive oil
1/2 red onion, finely chopped
1 large carrot, grated
1 garlic clove, finely chopped
1 handful of fresh parsley, chopped
2 tablespoons chickpea flour
1 tablespoon soy sauce
1/4 cup goat cheese
Salt and pepper to taste

What To Do:

  1. Preheat the oven to 400 degrees.
  2. Bring the lentils and water to a boil, then reduce the heat to a simmer. Let lentils cook until all the water is absorbed — about 10 minutes. Set aside in a large bowl.
  3. While the lentils are cooking, heat oil a medium frying pan over medium-high heat.
  4. Add the onion, carrot, and garlic to the pan and sautée until the onion is translucent and the other vegetables are tender.
  5. Add the cooked vegetables to the bowl of lentils along with parsley, chickpea flour, soy sauce, and salt and pepper. Stir until evenly combined.
  6. Lightly grease a small casserole dish (8x8 inches should work) with cooking spray or olive oil, and spread the mixture evenly in the dish. Top with the crumbled goat cheese.
  7. Bake the casserole for about 10 minutes, or until the cheese has softened and melted.
  8. Top with some extra fresh parsley, and enjoy!
