Super Bowl Sunday is a night many Americans forget about those fresh new year's resolutions. The NFL championship game is not exactly a prime dieting night thanks to the snacks, beer, and desserts. After all those wings, nachos, bacon-coated potato skins, and pigs in a blanket, pledging to follow Meatless Mondays might sound like a good idea. These vegetarian entrees are light but definitely not bland — in fact, they just might convince you to go veggie more than once a week!

Pizza with Onion Confit via Eat.Live.Travel.Write
This recipe is a little vague, so feel free to make substitutions or add extra toppings. The pizza pictured below features sweet caramelized onions, fresh goat cheese, and spicy arugula to balance it all out. Sub in whole-wheat crust (homemade or storebought) to make this vegetarian recipe even healthier.

Quinoa Salad with Shaved Brussels Sprouts via Katherine Martinelli 
Try this colorful salad for a perfect balance between sweet and savory. Combine sautéed Brussels sprouts, sweet potatoes, dried cranberries, slivered almonds, and a drizzle of maple syrup to make this seasonal side dish.

Between the red and yellow bell peppers, purple onions, cilantro, and guacamole, this makes for one colorful dinner. Portobello mushrooms are super filling and provide plenty of meaty flavor, minus the meat.

This meatless recipe comes together in less than half an hour, and most of the time is waiting for the chickpeas to cook! Serve as a side dish or with some pita bread and a big salad for a light, fresh dinner.
