Sometimes the most important meal of the day is the trickiest to eat — whether we’re rushing to get to work or simply stuck in the same breakfast routine. So we asked our ambassadors what their favorite, healthy breakfast is, along with how to make it. Dig in, eat up, and have a great and healthy morning.

1. PEANUT BUTTER BANANA OVERNIGHT OATS

The night before, combine 1/2 cup instant oats and 1/2 cup unsweetened almond milk. Add in 2 tablespoons of vanilla whey protein powder, 1 tablespoon of peanut butter, and 1/2 of a small banana, sliced or mashed. In the morning, top with 1/4 cup Fiber One Original cereal. (via Claire Siegel)

2. Veggie Scramble

Throw whatever vegetables you have on hand into a pan (I usually do onions, squash, tomateos, spinach and garlic), and cook until tender. Scramble together with an egg just to hold it all together. Add salt, pepper, and parmesan to taste and serve with whole grain toast! (via Danielle Nardi)

3. Coconut milk breakfast quinoa

Combine 1/4 cup of rinsed quinoa and 1/2 coconut milk with a pinch of ground vanilla, cinnamon, and salt. Let simmer for about 15 minutes. Toast a few pecans, chop half a banana, and bring it all together. Drizzle with some more coconut milk and sprinkle with cinnamon! (via Johanna Bath)

4. paleo pumpkin pancakes

Combine 2 tablespoons of almond flour, 2 teaspoons coconut flour, 2 jumbo eggs, 1/4 cup pumpkin puree, 1/2 tablespoon almond milk, 1/2 teaspoon cinnamon, 1/4 teaspoon pumpkin spice, and a dash of baking soda. Mix ingredients together and pour 3-5 pancakes in a large skillet. Cook for a couple minutes on each side. Enjoy topped with maple syrup, or almond or coconut butter! (via Amber Williford)

5. chocolate peanut butter smoothie

Combine 2 scoops of chocolate whey protein powder, 1 banana, 1/2 cup unsweetened vanilla almond milk, 1 tablespoon almond butter, 1 tablespoon ground flax seeds, and ice. Blend and enjoy! (via Jessica Grimes)

6. CHORIZO &EGG BREAKFAST CASSEROLE
Pre-heat the oven to 375 degrees. In a frying pan, brown 1 lb chorizo sausage. In the mean time, crack 8 eggs into a 9×13 inch baking dish and whisk. Add salt, pepper, cilantro, and hot sauce if desired. Place the dish in the oven and cook for 25-30 minutes, or until cooked throughout. (via Arika Lycan)

7. broiled grapefruit with brown sugar and yogurt

Brush a grapefruit with a bit of butter, and sprinkle with brown sugar and cinnamon. Broil for 10-12 minutes. Top with vanilla flavored Greek yogurt and dash with a bit more cinnamon and brown sugar. (via Tara Sabo)
