We all love mashed potatoes with gravy, stuffing, and hearty casseroles, but this year, let's add a big bowl of healthy greens to the Thanksgiving line up! Use colorful rainbow chard or red chard to brighten up the table.

Swiss chard, like spinach, cooks up really fast. Save time by prepping the ingredients ahead of time, then get the greens cooking five to 10 minutes before you're ready to sit down for dinner.

Recipe: Sauteed Swiss Chard with Ginger

Sauteed Swiss Chard with Ginger Photo by Kelli Dunn Seves 2-4 as a side dish

What You'll Need:

1 large bunch (approx. 8 cups) Swiss chard, chopped
2 tablespoons olive oil
1-inch piece fresh ginger, peeled & grated
2 cloves garlic, minced
1 tablespoon lemon juice
Salt and fresh ground pepper

What to Do:

  1. Thoroughly wash and dry the chard. Chop crosswise into strips.
  2. Heat oil in a large saute pan over medium heat. Add the chard to the oil and stir to coat all the leaves.
  3. Stir in the grated ginger, garlic & lemon juice, and season with salt & pepper.
  4. Cook until the leaves are wilted, about 5 minutes.
  5. Serve immediately.
