Ingredients

  • 1 pound tomatillos, halved
  • 2jalapeno peppers, seeded and roughly chopped
  • 1onion, roughly chopped
  • 2cloves garlic, roughly chopped
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon chili pepper
  • 1/4 bunch cilantro
  • 1/2lime, juiced
  • Salt
  • Pepper
  • 2 tablespoons extra-virgin olive oil

Directions

  1. Preheat oven to 375 degrees.
  2. Place tomatillos, jalapenos, onion, and garlic on a baking sheet.
  3. Bake for 30 minutes. Remove veggies from oven and let cool.
  4. Once cool, transfer to a food processor or blender with cumin, chilli pepper, cilantro, lime juice, and salt and pepper to taste.
  5. Adding olive oil in a steady stream, blend until mixture is smooth and even.
  6. Taste test and add additional seasonings according to preferences.
