You got us—we’re chia pudding maniacs! We can’t help it; the mixture is sweet and creamy, yet packed with nutrients. Why would we ever need anything else for breakfast (or dessert, for that matter)?

We like this version topped with mini chocolate chips and shredded coconut… but you should experiment with any nuts, seeds, or fresh fruit you like.

Coconut Banana Chia Pudding

Makes: 16 6-ounce servings
Ready in: 10 minutes

INGREDIENTS
1 cup coconut cream (the thickest part from the cans; toss the liquid or save it for a smoothie.)
2-3 drops liquid stevia
1 ripe banana
3 tablespoons chia seeds
Fruit, dried fruit, dried coconut flakes, and nuts for toppings

DIRECTIONS
1. Blend the coconut milk, stevia, and banana in a food processor.

2. Pour into a bowl and mix in the chia seeds.

3. Cover with plastic wrap and place in the refrigerator for a few hours or overnight.

4. In the morning, give it a good stir and add in your favorite toppings!
